Uzco - Japanese-Style Damascus Santoku Knife 17 cm is a compact and responsive santoku, ideal for everyday preparation: slicing vegetables, cutting boneless meat and working fish with precision. Its 67-layer stainless damascus blade, with a VG-10 steel core (HRC 60), offers a fine edge, excellent edge retention and clean cutting. The 170 mm Santoku profile (45 mm blade height) provides stability and control on the cutting board.

The progressive thickness (2 mm at the heel, 1.5 mm toward the front) promotes smooth penetration and precise movements. The double bevel makes the knife ambidextrous. The mirror-polished “Autumn Edition” finish gives a premium look and smooth glide during fast cuts. The octagonal stabilized birch handle, with G10 spacer and hygienic waterproof finish, ensures a secure and comfortable grip. Supplied with a sharpening stone, it is a complete set for clean and efficient cooking.

No, the dishwasher damages the cutting edge and can cause the blade to rust. Wash by hand and dry immediately.

Yes, if the steel isn’t 100% stainless or if the knife is left damp. To avoid this: rinse it, dry it straight away, and don’t leave it to soak.
Which board should I use?
Wood or food-grade plastic. Avoid glass, stone and marble: they dull the blade very quickly.
