Uzco - Japanese-Style Damascus Nakiri Knife
This 16.5 cm nakiri combines a 67-layer stainless damascus construction with a VG-10 core rated at HRC 60, delivering precise cutting and good edge retention. The 52 mm blade height guides the hand and secures slicing, while the progressive thickness (2.2 mm at the heel, 1.5 mm towards the tip) improves penetration and fluidity. The double bevel makes it ambidextrous and easy to handle. The octagonal handle offers a stable, premium grip. At 175 g, it remains firm on the cutting board without feeling heavy. Ideal for julienne, brunoise, cabbage and herbs.

FAQ
Can I put my knife in the dishwasher?
No, the dishwasher damages the cutting edge and can cause the blade to rust. Wash by hand and dry immediately.
Can the blade rust?
Yes, if the steel isn’t 100% stainless or if the knife is left damp. To avoid this: rinse it, dry it straight away, and don’t leave it to soak.
Which board should I use?
Wood or food-grade plastic. Avoid glass, stone and marble: they dull the blade very quickly.
Is this knife ambidextrous?
Yes, the grind is symmetrical (50/50).
