Miyazaki Kodawari - Santoku 5" is a compact and versatile Japanese Santoku, perfect for chopping, slicing and cutting with a clean and consistent edge. Its 13.3 cm blade made of high-carbon Japanese stainless steel offers maximum sharpness, excellent edge retention and easy sharpening. With a total length of 24.5 cm, a thickness of 2.0 mm and weighing only 112 g, it is fast, precise and very pleasant to use on the cutting board, especially for everyday cooking.

No, the dishwasher damages the cutting edge and can cause the blade to rust. Wash by hand and dry immediately.

Can the blade rust?

Yes, if the steel isn’t 100% stainless or if the knife is left damp. To avoid this: rinse it, dry it straight away, and don’t leave it to soak.

Which board should I use?

Wood or food-grade plastic. Avoid glass, stone and marble: they dull the blade very quickly.
