Kotai - Santoku Bunka takes the tall, flat profile of a santoku and adds a “K-tip” (reverse tanto) tip to gain precision in fine cutting tasks. This format is ideal for cleanly slicing, cutting and mincing, with superior control over details and angles.
Kotai - Santoku Bunka
Handmade, it is equipped with a 17 cm blade made of high-carbon 440C stainless steel, rust-resistant and cryogenically treated. The HRC 60 ±1 hardness, 1.8 mm spine thickness and 15° edge angle provide smooth, clean and consistent cutting. The double bevel and symmetrical 50/50 sharpening suit both right- and left-handed users. The ebony handle with hidden full tang provides stable balance and lasting comfort (176 g). Supplied with a bamboo saya blade guard and a sustainably grown bamboo box, it is a premium, precise and elegant knife.

Can I put my knife in the dishwasher?
No, the dishwasher damages the cutting edge and can cause the blade to rust. Wash by hand and dry immediately.
Can the blade rust?
Yes, if the steel isn’t 100% stainless or if the knife is left damp. To avoid this: rinse it, dry it straight away, and don’t leave it to soak.
Which board should I use?
Wood or food-grade plastic. Avoid glass, stone and marble: they dull the blade very quickly.
