The Tecaran handle is resistant to water and heat and provides a very comfortable grip for smooth, controlled work. With a total length of 23 cm and a blade thickness of 2.0 mm, this knife remains stable on the cutting board while being extremely maneuverable. It is part of the Master series and features “Izumi Ichiago” in Japanese characters on the pommel, a signature detail that reinforces its premium character. The vegetable knife is the knife of precision: it is mainly used for peeling, trimming (removing damaged parts), finely cutting garlic/shallots/herbs, and making small, clean cuts, often directly “in hand” thanks to its short blade and pointed tip. It is used with short, controlled movements, without forcing (for large, hard vegetables, a chef’s knife is preferable), and it is all the safer and more effective when well sharpened, as a dull knife tends to slip more easily.
