The 18.5 cm blade in high-carbon Japanese stainless steel benefits from an optimized blend of chromium and carbon: excellent rust resistance, solid hardness, and good sharpenability. With a total length of 32 cm, a thickness of 2.5 mm, and a weight of 270 g, this nakiri maintains excellent stability to guide cuts without forcing, ideal for slicing, chopping, and preparing large volumes of vegetables. The Tecaran handle provides a secure and comfortable grip, pleasant during long preparation sessions. The nakiri is a Japanese knife made for vegetables.

Yes, if the steel isn’t 100% stainless or if the knife is left damp. To avoid this: rinse it, dry it straight away, and don’t leave it to soak.

Which board should I use?
